Crepes are thin and delicate French style pancakes basically made without using any rising agent. When made correctly, they are as thin as lace with irresistible buttery crisp edges. These French street food staples can be dressed up with sweet and both savory topping and any of flavorful filling. The basic crepe recipe is neutral in flavor that's why it can easily paired with sweet or savory filling. The major difference between crepes and pancakes is that crepes are very thin and flexible making them perfect for filling, folding and rolling. American pancakes on the other hand are thick, fluffy and far more cake like.

Ingredients

Directions

  1. 1

In a mixing bowl add flour, salt and powdered sugar. Mix well and keep this dry mixture aside.

  2. 2

In another bowl add milk, melted butter, egg and combine everything well.

  3. 3

Add these wet ingredients in the dry mixture of flour gradually so that batter could be handled easily without lumps. We need to make smooth batter so mix it well.

  4. 4

Then add boiling hot water in this mixture, mix well. Thin and smooth batter will be ready.

  5. 5

Let the batter rest for 15-20 minutes.

  6. 6

Heat a non stick pan over medium heat and brush it with oil, do not brush too much oil. If you are not using non stick pan then grease it with a little bit more oil so the crepes may not stick to the pan.

  7. 7

Stir the batter well, then pour a big spoon of batter in the pan, swirl the pan quickly so that batter could spread thinly and evenly in the bottom.

  8. 8

Let the crepe cook for 1 minute from the bottom, flip the side and cook for 1 more minute from the other side as well. Take out of the pan over the plate and let it cool down completely.

  9. 9

Repeat the same process with complete batter.
