Caramel Kulfi, cut kulfi ice cream or sliced roll malai kulfi is a unique and interesting frozen dessert recipe prepared with full cream milk and sugar. Basically roll cut kulfi is a traditional and authentic Indian dessert recipe that is known for its simplicity, creaminess and richness in its taste. Kulfi is a mixture of milk, sugar, and various flavoring. All this mixture frozen in cone-shaped molds known as “kulfi moulds,” results into traditional India Pakistan frozen treat called kulfi. Kulfi can be flavored with a variety of ingredients, but some of the more well-liked ones are saffron, cardamom, pistachio, rose, and mango. Cut roll kulfi, or roll cut malai kulfi which is frequently offered by street vendors in India, is frequently eaten as a cool treat during the sweltering summer months.

Kulfi typically served as a dessert dish, particularly after a heavy or spicy meal, but to be honest do not require any reason to relish it.  The recipe of caramel kulfi that I am sharing is shaped and sliced like a pinwheel roll but is prepared with caramelized sugar which is later mixed with full cream and reduced milk. Caramelized sugar introduces a charcoal flavor to the kulfi with strong color and texture to the kulfi. moreover, the other significant ingredient added to this dessert is corn flour, which helps to set and get a smooth texture to the kulfi. This is a homemade malai kulfi, give it a try and enjoy.

Ingredients

Directions

  1. 1

In a pan add milk (take out about 1/2 cup for later use).

  2. 2

Add dry milk powder in it and mix well. Milk powder will give a creamy texture to the kulfi.

  3. 3

Add fresh cream or malai in it along with cardamom powder, mix well.

  4. 4

Put the pan over high flame and heat the milk till a boil came.

  5. 5

After the boil turn the flame to medium high and continuously stir it till the milk reduced to half. Do not leave the milk or it will stick to the bottom. Also scrap the sides of pan.

  6. 6

After 10-12 minutes the milk will reduce to half so take it away from the flame.

  7. 7

Now start caramelizing sugar. In a pan add sugar and let it melt over low flame. Do not stir it till the sugar starts to melt.

  8. 8

Then stir it and melt the sugar completely with a golden color. Do not melt it too much as if the sugar turns dark it will give bitter taste to the kulfi.

  9. 9

Take the sugar pan away from the flame and put back the pot with milk over flame.

  10. 10

Add the caramelized sugar in the milk and mix well over low flame. The sugar will get crystalized initially but will melt again when the milk will heat up properly.

  11. 11

Now the 1/2 cup milk that we separated initially add corn flour in it and mix well.

  12. 12

Pour this corn flour mixture in the caramel milk while stirring continuously so that lumps may not form.

  13. 13

Cook the milk for 2-3 minutes till it gets thick and turns creamy. Turn off the flame and let the kulfi mixture cool down completely.

  14. 14

Add the mixture to the blender jug to make it cream and smooth.

  15. 15

Pour the mixture in any glass or container to give it a roll shape. Cover with lid or aluminum foil.

  16. 16

Put the kulfi in freezer to set for about 7-8 hours or over night.

  17. 17

unmold the kulfi and cut it into rolls before serving.

  18. 18

Enjoy your caramel kulfi or roll cut malai kulfi, garnish with some chopped dry fruits.
