By blending the ingredients in a certain order, you can easily make a cake with the texture of one mixed with a hand mixer or electric beater. Today I am sharing a perfect quick and easy recipe of vanilla sponge cake in a pateela using a blender for begginers. Unlike other Vanilla Cake Recipes, this recipe doesn't use butter or condensed milk but if you want to avoid eggs you may substitute with condensed milk or yogurt.The beauty of this cake is that you can use pressure cooker or karahi or any other pot for baking it.   1. In a blender add eggs, oil and sugar. Blend all these things together and take out in a bowl.

  2. Put a strainer on another bowl and sift all purpose flour, baking powder and baking soda through it.

  3. Now gradually add the dry ingredients in the egg mixture and combine well with spatula or spoon till a lump free smooth mixture form.

  4. The batter will be stiff at this stage so gradually add milk in it and mix it to make cake batter of slightly thick consistency.

  5. Add vanilla essence and mix it again a little bit.

  6. Now take a pan and grease with some oil.

  7. Put a baking paper in the bottom of the pan and grease it as well.

  8. Pour the cake batter inside this pan and gently tap the pan on shelf for 1-2 times to remove the air bubbles from it.

  9. Take a big pot (pateela) and put a wire stand in it. Cover the pan (pateela) and pre-heat it on medium flame for 5 minutes.

  10. Put the cake pan inside this pre-heated pan, cover it and let the cake bake on medium to low flame for 35-40 minutes.

  11. After the time insert a toothpick inside the cake, if it comes out clean the cake is ready.

  12. Take the cake out, let it cool down till it comes to the room temperature.

  13. Run a knife around and take the cake out on a wire rack, remove the baking paper from bottom.

  14. Soft, spongy and easy to prepare vanilla sponge cake in blender without oven is ready to serve.
