We Pakistani love to enjoy different tastes of different cultures and especially Chinese food. Egg fried rice or chicken fried rice is a dish of cooked rice that has been stir fried in a wok or frying pan along with some vegetables, meat and eggs. The secret behind cooking best fried rice with a crunch of vegetables in it, cook these on high flame. Do not lower the flame at any stage. Also you can do the preparation ahead of time. Chinese rice prepared with the rice boiled 1-2 days before cooking tastes delicious. But even if you prepare these on time, these can be done within 30 minutes. You can serve these as main or side dish as per your choice. There are so many recipes of these vegetable fried rice on internet and each one has its own variation. Mine is i think in the category of easiest egg fried rice recipe. Do give it a try and enjoy the appreciation of your family.
In a bowl beat the eggs. Put a pan on medium flame and heat some cooking oil in it.
Fry the eggs, take out of the pan and keep aside.
Again heat the cooking oil in the pan and turn the flame now to high.
Add chopped garlic in it and saute for few seconds so that raw smell should gone.
Now add boiled peas in it and fry for a minute
Then add boiled and shredded chicken in it and fry it for 1-2 minutes as well.
Then add julian cut carrots in it and fry these as well. Keep in mind the flame should be high while frying all these vegetables as these will release their water on low flame and lost their crunch.
Add cabbage and capsicum and fry for 1-2 minutes these.
Add chicken powder and black pepper powder in this mixture and combine everything.
Then add soy sauce and give a good mix.
Now as we already added salt in rice while boiling and also soy sauce and chicken powder have salt. So first taste the mixture at this stage. If required add salt now.
Gradually add the boiled rice in this prepared masala. Mix gently as the rice are cooked and can easily be broken.
Finely add the fried eggs in the rice and mix these as well.
Easiest egg fried rice are ready to serve.
Note: There is no knead to cover and steam cook the rice as we already used fully boiled rice in this recipe.
In the restaurants sugar is used to be added after adding soy sauce and salt to cut the sharpness and enhance the flavors. I did not added as my family enjoy these rice as it is, but you can if you want to enjoy authentic restaurant style egg fried rice.
