Thandai is a traditional drink of Pakistan and India that involves a long process and some efforts for making. The Indian process of making thandai or sardai is little bit different then Pakistan. In Pakistani Punjab we use simple few ingredients like almonds, black pepper corns, poppy seeds (khas Khas), cardamom and sugar to make sardai or thandai. But still it is a tough process to make as khas khas or poppy seeds take a lot of arm exercise to fully grinned in traditional clay or stone mortar.
As Ramzan is approaching people needs to drink cool and refreshing drinks or juices in aftaar to beat the heat of the day. Thandai can be a good source of energy and flavors in iftaar and can also be prepared instantly with ready made thandai powder or thandai masala mix. Today I am sharing Ramadan special instant thandai powder recipe. With this thandai masala you can easily and quickly prepare thandai for your aftaar.
Take a grinder and add fennel seeds along with some sugar in it. Grind these to make a fine powder.
Take a strainer and strain the grinned fennel seeds and sugar.
Grind the remaining big pieces of seeds again into a fine powder.
Now grind almonds, black pepper corns, cashew nuts, pistachio, green cardamom, poppy seeds and some sugar into fine powder.
Strain all these grind ingredients well and grind again the remaining big pieces.
Grind the remaining sugar as well into fine powder and mix it into already grinned and strain ingredients. (If you are diabetic patient you can lesser the quantity of sugar or skip it if you want to but grinding some ingredient with sugar turn them easily into fine powder that's why we use it little bit while grinding everything).
Mix all the grind ingredients well and our homemade instant thandai powder is ready.

Take a glass of boiled and chilled milk in the blender.
Add 3 tablespoon of thandai powder in it.
Grind well and ice cubes in it if required.
Serve chilled and enjoy.
