Pickle is one of the essential item of kitchen in every house of India and Pakistan. We love to enjoy our food especially in summers. But the process of making pickle with oil is a bit long and hectic. It also involves technique of its own. Although the result of all the efforts is always amazing and i enjoyed these pickles very much. Traditional pickles of Pakistan involves oil, some spices and sun heat to infuse the flavors completely in the vegetables.

But today I am sharing a different recipe of pickle here. I know we all kitchen queens want to preserve the vegetables to use them out of season with all their flavors intact. Today I am sharing how to preserve vegetables in vinegar. You can also call these pickled vegetables in vinegar. Quick pickles also called refrigerator pickles. Here I am sharing the recipe of how to quick pickle any vegetable in vinegar. You can easily preserve fruits, vegetables and herbs in vinegar as
people have done for centuries. It produces delicious foods and gives
bacteria little chance of thriving. They are simply vegetables that are pickled in a vinegar, water, sugar and salt solution. In today's recipe I will share the pickling of carrots, cucumber, onion, green chilies and garlic. You may use any one of these vegetables or other vegetables as per your choice the process will remain the same.

There are two basic things to keep in mind before preserving/pickling vegetables.

1. Select your vinegar carefully as it clearly influences taste

2. As with any preserve cleanliness is important so make sure your jars and implements are spotless.

  1. Cut the cucumber and carrots in the shape of french fries.

  2. In a pan add water, vinegar, mustard seeds, crushed garlic cloves, sugar and salt along with any kind of herb as per your choice.

  3. Let the vinegar water starts to boil on medium flame.

  4. Do not cut the onion just put a cut in the middle and use the onion as a whole. Also put a slit in the green chilies and do not chop them as well.

  5. In the air tight jar add all vegetables.

  6. When the vinegar water starts to boil turn off the flame and pour it into the vegetable jar immediately.

  7. Put the lid on the jar and air tight it.

  8. Let the pickle set for 3 days and then you can put it in the fridge.

  9. Delicious and quick mix vegetable pickle in vinegar is ready to enjoy.

  10. Note: The water and vinegar liquid will be enough for 600 grams of vegetables. So you may use either any single vegetable or mix of other vegetables as per your choice.
