There are so many recipes of cakes on internet and even on my website but the recipe that I am going to share today is a personal favorite recipe. It is the recipe of a no beater no oven vanilla sponge cake that is so soft, fluffy and have a bakery style texture and taste. The recipe is very simple and also i have elaborated each and every step of how to make vanilla sponge cake without oven and beater. If you want to bake this cake in the oven than bake it at 180 °C and check the cake after 40 minutes. There may be little difference in the color of no oven vanilla cake but there will be no difference in the taste and texture. Vanilla cake is a base of cake and you may create variety of decorations on it. You may even serve this cake as a vanilla sponge cake for evening tea or for kids lunch time and snacks.

  1. Strain all purpose flour, baking powder and salt through a strainer. Keep all these dry ingredients aside.

  2. In a mixing bowl add eggs and beat with a hand whisk for 7-8 minutes so that eggs became fluffy.

  3. Now add powdered sugar in the eggs and beat again for 5-6 minutes more or till the eggs change their color and becomes fluffy.

  4. Gradually add the dry ingredients that we already strained in the egg mixture and gently fold with the help of spatula so that the air that we developed by beating the eggs should remain.

  5. Add cooking oil and vanilla essence in this mixture and combine well. Our cake mixture is ready.

  6. Grease a 9" baking pan with cooking oil and add butter paper in the bottom. Pour the batter in the pan, tap it to remove the air bubbles.

  7. Put a karahi or a big pot on medium flame and pre heat it for 5 minutes.

  8. Now put a wire stand in it and then put the cake pan in this heated pot. Cover the pot and bake the cake for 50-60 minutes on low flame.

  9. After the time insert a tooth pick in the center if it comes out clean the cake is ready. Take it out and let it cool down completely.

  10. Mean while prepare the frosting. In a mixing bowl add heavy cream and beat it till the stiff peaks forms.

  11. When the cake is cool down, run a knife around and take the cake out.

  12. Cut the cake in 2 layers.

  13. Soak the first layer with milk and then add the frosting on it.

  14. Spread fruit cocktail over it.

  15. Put the second layer on it and soak it as well with milk.

  16. Cover with whipped cream and smooth the top and sides of the cake.

  17. Decorate the cake top as per your choice.

  18. Bakery style no oven no beater vanilla sponge cake is ready to enjoy.

  19. __________ Note:As the electric beater or stand mixer or not used in this recipe the whisking of eggs will take time and effort so do not be worried if you feel that egg beating is taking more time than mentioned in the recipe.

  20. I decorated the cake simply and even added just fruit cocktail and some chocolate chips in the center. But you can add whatever you want.

  21. Refrigerate the cake before serving for 1-2 hours . This will increase the flavor and also the frosting will be set completely.
