I love carrot cake and this recipe is so amazing, easy, quick and delicious that my family also fallen in love with this moist carrot cake. This is the best carrot cake with cream cheese frosting that you will ever taste. The roasted walnuts adds depth in the flavor of this dessert. Yes! for me its not a cake but dessert. I have added so many carrots recipe on my website and believe me this is one of the best recipe. With its outstanding spice flavor, super moist crumb and velvety cream cheese frosting this is truly the moist and best carrot cake without oven and it is almost impossible to stop at only one piece.
Pre heat a pot on medium to low flame for 10 minutes with a wire stand in it.
Wash and grate 2 carrots. Grate these with the fine side of grater. After grating weight these as we need 150 grams grated carrots.
Dry roast the walnuts and keep aside.
Grease a 6 inch pan and put a butter paper in it. Keep it aside.
In a bowl take milk and add vinegar in it, give it a mix and keep aside. This will be our butter milk for cake.
Now in a mixing bowl add brown sugar, white sugar, eggs and beat with an electric mixer for 7-8 minutes till the batter become light and airy. (you may use hand whisk but that will take a lot of effort).
Add already prepared butter milk in this mixture and mix it as well.
Continue beating and gradually add cooking oil in the batter, mix well.
Put a strainer on the bowl, add all purpose flour, baking powder, baking soda, cinnamon powder and strain everything in the wet mixture.
Combine well with the help of spatula.
Also add grated carrots and roasted walnuts in this mixture and combine these as well. ( I crushed the walnuts with hands you may chop as well)
Pour the cake batter in the prepared pan, put the cake pan in the pre heated pot, cover the pot and let the cake bake on medium to low flame for 45-50 minutes or till the tooth pick inserted comes out clean.
After the cake is baked take it out and let it cool down completely.
For frosting, take the whipping cream in a mixing bowl and beat it for 2-3 minutes.
Then add honey and cream cheese in this cream, bet well till the stiff peak forms.
Cut the cake in 2 layers and cover with prepared frosting.
Garnish with frosting and chopped walnuts.
Best and healthy carrot cake is ready to enjoy.
_________ Tips: The cake will be very moist and delicate so handle it carefully. The second layer of my cake cracked during frosting so be careful while handling it.
