As we hear about the summers the first thing that came in mind is juicy, fragrant and ripe mangoes. Pakistani mangoes are very fragrant, juicy and rich in taste. In fact mango is one of those very few things that we like about summer season. We use to have mangoes in lassi milk shake and smoothie.

Today I am sharing a recipe to use mangoes in another style. Its the recipe of mango milk cake without oven. You must be thinking that recipe is expensive, tedious and needs a lot of ingredients. But this mango tres leches cake recipe is totally opposite of your perceptions. It is very easy to make and even the biggeners can make it easily,  Milk cakes are real addiction. That soft spongy base immerse in yellow mango milk topped with whipped cream and a layer of juicy mango chunks is a next level dessert to try out this summer. I hope you will try this mango cake recipe and will enjoy it.

  1. In a mixing bowl add eggs, sugar and yellow food color. Beat till the eggs become fluffy (stiff peaks form) and sugar completely dissolves.

  2. Put a strainer over the bowl and strain flour and baking powder through it.

  3. Slowly and gently mix the dry ingredients in the egg mixture so that the air that we incorporated in the eggs should remain.

  4. With a spatula make sure that dry ingredients are not stick to the bottom.

  5. Grease a heat proof baking pan and add the cake batter in it. Smooth the batter with spatula or by tapping it.

  6. Pre heat a wide pot (pateela) for 10 minutes on low flame with a wire stand in it.

  7. Put the cake pan in it, cover the pot and bake the cake for 30-35 minutes on low to medium flame or until a skewer comes out clean.

  8. Take out the cake and let it cool down completely.

  9. Run a knife around and take the cake out. Then again put it in the same pan.

  10. Poke some holes with a skewer and pour the mango milk over it. Let the mango milk absorb completely in cake.

  11. Pour the whipped heavy cream in a piping bag and garnish over the cake.

  12. Spread some chopped mango chunks over it.

  13. Chill the cake for 1-2 hours before serving.

  14. No oven mango milk is ready to enjoy.

  16. In a blender jug add mango pulp, milk, condensed milk and sugar. Blend well.
