Kulfa or kulfi is a dessert flavor in sub continent. Kulfa ice cream is also called shahi kulfa is one of the most popular and delicious flavor in frozen dessert. I also love to eat it due to creamy and nutty flavor. The recipe that I am going to share today is so easy and required no special equipment. Most of the ice cream recipes on internet requires condensed milk but my recipe is without it. This delightful kulfa ice cream can be prepared in 30 minutes and freezing time could be around 10-12 hours.   1. In a pan add milk, sugar, cardamom and let it boil on medium flame.

  2. Let the milk boil then add crushed almonds and pistachios in it.

  3. Cook the milk to reduce it and thick it while stirring continuously.

  4. Turn off the flame and take out the milk in a bowl. Let the milk cool down completely.

  5. Now in a chilled bowl add chilled heavy cream.

  6. Beat the cream till stiff peak forms.

  7. Add kulfa essence and mix well.

  8. Then add the prepared thick milk in it and mix well.

  9. Put the ice cream in the container, top with a butter paper and seal the lid.

  10. Chill the ice cream in freezer for 12 hours at least.

  11. Serve and garnish with chopped almonds and pistachios.
