Chutney rice is one of the most common and famous dish in subcontinent of India and Pakistan. Chutney or chatni is a spicy or savory sauce originated in India. Chutney is made from vegetables, fruits, herbs with vinegar, lemon, sugar and spices. It is used to provide balance to a dish or enhance a specific flavor in the dish.
Today I am sharing "chicken chutney ginger rice" recipe which gives fusion of different flavors. Fusion cuisine is one that combines elements of different traditions. Fusion food of this type cannot categorized in one form and fusion can play an important part in many food innovations. You have seen so many recipes of ginger rice or chatni rice on internet but chicken chutni ginger rice recipe is one of its own kind and very rare to found. Prepare these chutney rice for any family gathering and enjoy appreciation of your family.

Wash and clean the coriander and mint. Separate leaves of mint and coriander from the bunch.
In a blender jug add mint and coriander leaves along with ginger, chopped green chilies, yogurt and blend everything well to make a fine paste.
Chutney is ready keep it aside.
In a pot add enough water for boiling the rice.Let the water boil on high flame.
When the water starts to boil add salt in it.
Strain the water from soaked rice and add these into the boiling water.
Cook the rice until they are 80 % done (check a rice if it breaks in 3-4 pieces that means it is 80% done).
Strain out the boiled rice and keep aside.
Now prepare the chicken curry for rice. In a pan add cooking oil and put it on medium low flame.
Add chopped onions in it and fry till they become soft. We do not need to change the color of these.
Then add the chicken in it and fry till the chicken changes its color and turn to white.
Then add the prepared chutney in it and give a good mix to everything.
Add the spices (salt, white pepper, black pepper) soy sauce, vinegar in it.
Now turn the flame to high as we have added the chutney and it will release water. Cook the chicken till the gravy thickens a bit.
Now finalize the chutney curry for layering the rice.

In another pot add half of the chutney gravy first, then add a layer of boiled rice over it, then again the layer of chutney curry on it.
Spread half of chopped green part of green onion over it and then give the layer of remaining boiled rice on it.
Spread the remaining half of the chopped green onion on it.
In a frying pan add cooking oil and fry the julian cut ginger in it to prepare the tarka for rice.
When the ginger turns to golden brown pour it along with oil over the chutney rice.
Cover the pot and let the rice steam cook on low flame for 8-10 minutes.
After the time dish out and enjoy your delicious and easy chicken chutney ginger rice.
