Shahi Tukray literally means royal pieces in Urdu and Hindi. It was a favorite dish of Mughal emperors to break fast in Ramazan and a meetha festively served on the occasion of Eid ul Fitar and Eid ul Azha.

____________ For Caramel Sauce _______________
In a pot add sugar, water and let the sugar melt on medium flame.
Turn the flame to low and let the sugar cook till it changes its color to golden brown.
Turn off the flame and add fresh cream in it. Whisk well till cream gets well combined with the caramelized sugar.
Add butter, vanilla essence, salt in the sauce and combine everything till the butter completely melts.
Add milk in the sauce and mix it as well.
Caramel sauce for shahi turay is ready keep it aside and let it cool down completely
_________Note: You can store this caramel sauce for up to 2 weeks in the refrigerator.
______________ For Milk Preparation _______________
In a pan add milk, condensed milk and cardamom powder. Put it on medium flame and let it boil.
Then cook for 5 minutes more. Stir in between so it may not stick to the bottom of the pan.
Turn off the flame and add fresh cream in this milk mixture.Combine well.
Let it cool down completely.
______________ For Bread/Tukray Preparation ________________
Heat oil in a frying pan on medium flame.
Cut each bread slice in half and fry in the oil till it turns crispy and golden from both sides.
Repeat the process with all bread slices and put aside.
_____________ For Assembling ____________
In the serving dish first pour some prepared milk.
Then add a layer of prepared bread slices, then again pour some prepared milk on it.
Repeat the layering in the same way.
Finely pour the prepared caramel sauce over the top and garnish with chopped dry fruits.
