Aam Pana (Tangi Green Mango Drink) is a refreshing Indian summer drink made using green raw mangoes bursting with sweet, tangy and beautiful flavors. Aam panna also called aam ka panna or aam jhora or kairi panha is the best way to refresh and dehydrate during the scorching hot summer of subcontinent. Made from raw green mangoes and Indian spices, this summer beverage is a sweet tart revelation that will make you come back for more. Aam ka panna or raw mango juice is a popular traditional drink that is made in most of the northern and western parts of India during the summer season when fresh green mangoes are in season. Black salt and roasted cumin not only improve the taste but also help in digestion. Due to its heat-resistant properties, green mango protects the body from heatstroke in summer. Aam panna is rich in Vitamin C and Iron and both are very beneficial for our body.

  1. Peel the raw mango (kairi) and cut the flesh into slices. Discard the seed.

  2. Put a sauce pan on the stove and add this raw mango flesh in the sauce pan. Add enough water that will completely cover the mango flesh.

  3. Let the mango cook on high flame for 5-7 minutes. You may do this process in the pressure coo as well.

  4. After the time the mangoes will be perfectly cooked, turn off the heat and let it cool down completely.

  5. After the pulp is cooled, put it in the blender jug.

  6. Add black salt, roasted cumin powder, green cardamom, black pepper powder, salt and blend everything well into a lump free paste.

  7. Put a strainer on a bowl and strain this blended pulp to remove any fiber and have a smooth mango paste.

  8. In a sauce pan add sugar and water, put it on high flame to cook till the sugar melts.

  9. Switch the flame to medium and add the raw mango paste in it.

  10. Stir continuously and cook the mango paste with sugar syrup on medium flame till the mixture becomes thick with a string consistency. This will take about 7-8 minutes.

  11. Add green food color (if you want to) at this stage and combine well.

  12. Turn off the flame and let the aam panna cool down completely. Store in any airtight glass bottle. You may use this mango panna concentrate for about 2 months in the fridge.

  14. In a glass add ice cubes along with 2-3 spoons of mango concentrate (aam panna). Add chilled water or soda as per your choice.
